Bean Broth Soup

It is probably more of a stew than a soup after all the broth gets absorbed.  You can add  Better than Bullion to water to extend the broth if you prefer it more soupier.

Bean Broth and Brat Soup

Ingredients

4 cups of bean broth

1 cup of diced white onion

1 cup of diced carrots

1 cup of diced celery

2 bratwurst links

2 cups of elbow macaroni

1 ½ cups of frozen peas

Instructions

Brown sausages in large stock pot on medium heat for about 7 minutes.  Remove sausages from pot, add carrots, onions and celery. Stir until vegetables are tender about 5 minutes. Add bean broth bring to a boil.  Once boiling add macaroni, reduce to simmer.  While macaroni is absorbing the bean broth, chop sausages into bite size pieces.  After macaroni has cooked, approximately 5 minutes, add chopped sausages and peas to pot.

Garnish generously with fresh parmesan.
