We needed to try the viral two ingredient high protein dough. I have seen it as a savory dough more often so it felt like it would be a fun idea to try something sweet. Because the dough has no added sugar, we used peak in season fruit to do the heavy lifting. The result is a small fun bite to have with coffee or a snack.

Leave it to me to think a high protein dough needs to be made into a dessert. Here is a fun spin that you can use any seasonal fruit with.
Rhubarb and Strawberry Compote
1 cup chopped rhubarb
1 cup chopped strawberry
¼ cup brown sugar
1 tsp vanilla
2 tablespoons lemon juice
1 TBL butter
High Protein Dough
1 1/3 cup self rising flour
1 cup Greek yogurt
Morning Buns with High Protein Dough
Mix well. Adding small bits of flour or water to get to a dough ball consistency. Let sit 10 minutes before handling.
Flour your surface before rolling out dough. I put cooking spray on dough roller so it is not rude.
Preheat oven to 375
Line 8×8 pan with parchment
Cook on low until it all mixes well and reduces. About 10 minutes. Remove from heat.
Spread compote evenly on rolled out dough. Roll into long tube. Cut into even small pieces. Place in pan, spiral size up. Cover with either butter or egg wash to make it brown and pretty. Cook for 18 minutes. Serve warm.
