The Plum Sour

The ripe, end of summer plum is the star of this sweet and sour drink.  Use an egg white (or aquafaba) to get a fun froth.

Ingredients for the simple syrup

1 cup sugar

1 cup water

2 ripe plums, chopped into pieces

1 TBL of ginger

Ingredients for the cocktail

2 oz gin

1 egg white (optional)

½ oz fresh lemon juice

1 oz plum simple syrup

Instructions

To make a Plum Ginger Simple Syrup:

Add equal parts sugar and water to a small sauce pan.  Boil and stir constantly to dissolve sugar.  Remove from heat.  Add a tablespoon of ginger (in pieces or frozen concentrate) and two very ripe plum, chopped. Let sit for ½ hour and strain. Refrigerate for up to a month.

 

To make cocktail

Add gin, egg white, lemon juice and simple syrup to shaker.  Reverse dry shake (all ingredients except ice).  Add ice and shake well.

Strain into chilled coupe or martini glass.
